🍽️ Baked Eggs with Tomato, Welsh Cheese & Basil

Serves 2

🛍️ Ingredients:

  • 4 free-range eggs
  • 200g chopped cherry tomatoes (fresh or tinned)
  • 1 red pepper, finely sliced
  • 50g Welsh cheese (Caerphilly, Caws Preseli or Cheddar), crumbled or grated
  • 2 tbsp olive oil
  • 1 garlic clove, finely chopped
  • Fresh basil leaves
  • Sea salt and freshly ground black pepper
  • Crusty bread, to serve

🦄 Method:

  1. Preheat oven to 190°C (fan 170°C).
  2. In a small pan, heat olive oil and gently fry garlic and red pepper until softened.
  3. Add chopped tomatoes, season with salt and pepper, and simmer for 10 minutes.
  4. Divide tomato mixture between two small ovenproof ramekins or dishes.
  5. Crack two eggs into each ramekin, then scatter over cheese and a few torn basil leaves.
  6. Bake for 12–15 minutes, or until the egg whites are set but yolks are still runny.
  7. Top with extra basil, cracked pepper, and serve with bread.

  • Use an oven-safe frying pan for a one-pan version
  • Great with avocado slices or a side of rocket salad
  • Make it dairy-free by using plant cheese or skipping cheese altogether
