🥔 Welsh Leek & Potato Soup
Serves 4
🛍️ Ingredients:
- 2 large leeks, trimmed and sliced
- 500g potatoes, peeled and chopped
- 1 onion, diced
- 2 garlic cloves, minced
- 750ml vegetable or chicken stock
- 1 tbsp unsalted butter
- 100ml double cream
- Fresh thyme, a few sprigs
- Salt and pepper, to taste
- (Optional) grated mature cheddar for tuile garnish
🦄 Method:
- In a large pan, melt butter and sauté onion and garlic until soft.
- Add sliced leeks and thyme, cook gently for 5 minutes.
- Stir in chopped potatoes, then add the stock. Simmer for 20–25 minutes until everything is soft.
- Remove thyme sprigs, then blend the soup until smooth.
- Stir in the double cream and season to taste. Warm gently — don’t boil.
- For tuiles: place grated cheddar in small circles on a baking sheet and bake at 180°C until golden and crisp.
- Serve soup hot, topped with cheese tuiles and fresh herbs.
🌿 Tips:
- The cream can be swapped for crème fraîche or omitted for a lighter version
- Chill and freeze leftovers for an easy lunch another day
