🥔 Roast New Potatoes with Garlic, Thyme & Butter
Serves 4 (as a side)
🛍️ Ingredients:
- 500g Pembrokeshire new potatoes
- 2 tbsp unsalted butter
- 2 tbsp olive oil
- 3 garlic cloves, crushed
- 1 tbsp fresh thyme leaves
- Flaky sea salt, to taste
- Freshly cracked black pepper
🦄 Method:
- Preheat oven to 200°C (fan 180°C). Scrub the potatoes and pat dry. No need to peel.
- In a roasting tray, toss potatoes with olive oil, melted butter, garlic, thyme, salt and pepper.
- Roast for 35–40 minutes, turning once, until golden and crispy on the outside and soft inside.
- Serve hot with extra thyme or a final crack of salt over the top.
