🥕 Soy-Glazed Roasted Carrots

Serves 4 as a side

🛍️ Ingredients:

  • 400g baby carrots, tops trimmed
  • 2 tbsp soy sauce
  • 1 tbsp runny honey
  • 1 tbsp olive oil
  • 1 garlic clove, finely grated
  • 1 tsp fresh grated ginger (optional)
  • 1 small red chilli, sliced (optional)
  • Fresh parsley or coriander, to serve

🦄 Method:

  1. Preheat oven to 200°C (fan 180°C). Wash and pat dry the carrots.
  2. In a bowl, mix soy sauce, honey, olive oil, garlic, and ginger.
  3. Toss the carrots in the glaze until well coated and spread on a lined baking tray.
  4. Roast for 25–30 minutes, turning halfway through, until the carrots are golden and sticky.
  5. Top with sliced chilli and fresh herbs before serving.
