🥕 Soy-Glazed Roasted Carrots
Serves 4 as a side
🛍️ Ingredients:
- 400g baby carrots, tops trimmed
- 2 tbsp soy sauce
- 1 tbsp runny honey
- 1 tbsp olive oil
- 1 garlic clove, finely grated
- 1 tsp fresh grated ginger (optional)
- 1 small red chilli, sliced (optional)
- Fresh parsley or coriander, to serve
🦄 Method:
- Preheat oven to 200°C (fan 180°C). Wash and pat dry the carrots.
- In a bowl, mix soy sauce, honey, olive oil, garlic, and ginger.
- Toss the carrots in the glaze until well coated and spread on a lined baking tray.
- Roast for 25–30 minutes, turning halfway through, until the carrots are golden and sticky.
- Top with sliced chilli and fresh herbs before serving.
