Serves 2

🛒 Ingredients:

  • 1 cup mixed salad leaves (e.g. red oak, butterhead, gem)

  • 1 handful shredded red cabbage

  • 1 carrot, ribboned

  • 1 small courgette, julienned

  • 1 ripe avocado, sliced

  • 8–10 cherry tomatoes, halved

  • 1 tbsp pomegranate seeds

  • 1 tbsp chopped walnuts

  • A few sprigs of watercress or microgreens (optional)

🥄 Dressing:

  • 2 tbsp olive oil

  • 1 tbsp lemon juice or apple cider vinegar

  • 1 tsp maple syrup or honey

  • 1/2 tsp Dijon mustard

  • Salt & pepper to taste

🥣 Method:

  1. Wash and prep all veg: shred the cabbage, ribbon the carrot, julienne the courgette, halve the tomatoes and slice the avocado.

  2. Arrange everything neatly in a shallow bowl.

  3. Whisk the dressing ingredients together in a small bowl.
