Serves 2
🛒 Ingredients:

1 cup mixed salad leaves (e.g. red oak, butterhead, gem)

1 handful shredded red cabbage

1 carrot, ribboned

1 small courgette, julienned

1 ripe avocado, sliced

8–10 cherry tomatoes, halved

1 tbsp pomegranate seeds

1 tbsp chopped walnuts

A few sprigs of watercress or microgreens (optional)
🥄 Dressing:

2 tbsp olive oil

1 tbsp lemon juice or apple cider vinegar

1 tsp maple syrup or honey

1/2 tsp Dijon mustard

Salt & pepper to taste
