🥗 Chicken Salad with Rocket, Tomato & Avocado
Serves 2
🛍️ Ingredients:
- 1 cup cooked chicken (shredded or sliced)
- 1 ripe avocado, sliced
- 1/2 red onion, thinly sliced
- 1/2 cucumber, sliced into rounds
- 8–10 cherry tomatoes, halved
- 2 cups rocket or mixed salad leaves
- 1 tbsp toasted sesame seeds
- 1/2 lemon, cut into wedges
🦄 Dressing:
- 2 tbsp olive oil
- 1 tbsp lemon juice
- 1/2 tsp Dijon mustard
- Salt & pepper to taste

- Prepare all your veg: slice the onion, cucumber, and avocado; halve the tomatoes.
